[Included in your retreat package are two family style plant based dinners for 2-4ppl)
Sample Appetizers:
Arugula Salad: with Pear, Pecans and Maple-Miso vinagrette (optional: crumbled Pecorino Romano cheeses)
Crostini: on sprouted 7 grain bread, organic chevre goat cheese, black truffle
Lentil Soup: Red Lentils, Tomatoes, Spinach and Cold Pressed Olive Oil drizzled on top
Sample Entrees:
Mexican Macro Bowl: Quinoa, Black Beans, Avocado, Mango, Tomato, Cheesy Nutritional Yeast (optional: eggs sunny side up or scrambled)
Sweet Potato Gnocchi: Sweet Potatoes, Sage, Fresh Oregano, Fresh Basil, Tomatos (optional: freshly grated Grana Padano and Pecorino Romano cheeses)
Chickpea Pizza: Chickpea Flour, Fresh Oregano, Fresh Basil, Tomatos, Grilled Eggplant (optional: Mozzarella, Ricotta and Grana Padano Cheese)
